

We have an abundance of fruits in our garden and allotment at harvest time including white, black and redcurrants, blueberries, strawberries, apples, cherries and rhubarb. We hate anything going to waste and making fruit leathers is the ideal way to preserve the fruit.
After washing the fruits and slicing the rhubarb, we gently cook the fruits and then blend the whole mixture to create a smooth texture.
This is then spread evenly onto dehydrator trays and heated for several hours, checking every couple of hours and switching the shelves to distribute the heat evenly. After about 8 hours, when the mix is soft and leathery, we remove, cut into strips and roll into leathers, add a little home made label and tie with string.
They last for months in the fridge, are completely organic, and a great healthy treat + a great vitamin C boost when you need it!
